We slow-smoke our spices in small batches using industrial smokers big enough to handle up to 1400 lbs. Trays of spices are slow-smoked using staves from oak bourbon barrels that once held some of Kentucky’s finest bourbon. This process gives our Bourbon Smoked Chili Powder flavor notes of smoke and oak pulled from the barrels, and results in a mellow spice that isn’t hot, but that has tons of flavor.
